Eighteenth-century tavern kitchens were busy places as tavern keepers were expected to provide patrons with a choice of meat, fish, fruits, and vegetables in season as well as a choice of beverages. Christiana Campbell's Tavern was noted to be George Washington’s favorite for seafood. During the 1760s and 1770s, when visiting to attend the General Assembly, Washington frequently mentioned in his diary having "Dined and Spent the Evening at Mr. Campbell’s" tavern. In April 1772, Washington specifically noted, "Dined at Mrs. Campbells and went to the Play – then to Mrs. Campbell’s again".
