Inspiration
Named for tea merchant Philip Hyson, Hyson was imported to Boston by the British East India Company. Hyson tea was highly prized in colonial times, and the tea tax was higher for Hyson than for other teas. It is created from green tea leaves, picked in spring, then thinly rolled and dried. During the Boston Tea Party, 70 chests of Hyson were destroyed.
