Inspiration
With refrigeration and canning yet unknown, the colonial inhabitants of Williamsburg depended on other techniques to keep their food supplies edible and to provide variety in the diet throughout the year, especially during the winter months. Food preservation methods used during the colonial period included drying, salting, pickling, and jellying.
Beginning around 1755, Christiana Campbell owned and operated one of Williamsburg's most successful taverns for nearly 30 years. She provided room and board to travelers and townspeople, often hosting government officials in town on business. When the General Assembly was in session, Campbell hosted members of the House of Burgesses, including Thomas Jefferson and George Washington. George Washington once noted in his diary that he had dined at Christiana Campbell's tavern 10 times in two months. Today the revitalized tavern is one of Colonial Williamsburg's premier historic attractions.
