This Spiced Apple Shrub Cocktail Mixer from Tait Farm Foods is a wonderful non-alcoholic mixer perfect for making cocktails and mocktails with a balanced flavor that is both tart and sweet! Made in small batches in Pennsylvania, simply add shrub syrup to your favorite spirits for a colonial-inspired cocktail, to soda or sparkling water for a non-alcoholic option, or in sauces and dressings for added depth of flavor. Ingredients: Organic sugar, apple juice concentrate (apple juice concentrate, water, natural flavors, citric acid, ascorbic acid, malic acid), apple cider vinegar, water, ginger, cinnamon sticks, allspice, cloves.
Inspiration
Shrubs were made in the 18th century from fresh fruit and sugar, left to ferment into vinegar. After fermentation, more sugar was added to the mixture, providing a tart, sweet, and refreshing syrup that could be enjoyed in cocktails, desserts, and sauces.

Warm Fruit Compote
This sweet, chunky fruit sauce is scrumptious when served alongside mascarpone cheese, over ice cream, or topped with whipped cream.
Ingredients
- 4 large apples; peeled, cored and sliced (or pears)
- 4 Tbs. butter
- 1/2 C. dried cranberries or raisins
- 1/3 C. Tait Farm Spiced Apple Shrub* or Shrub of choice
- 8 oz. mascarpone (or substitute ice cream or whipped cream)
- 2-3 Tbs. honey
- 1/2 C.+ crushed gingersnaps
Instructions
Stir the honey into the mascarpone by hand until well blended. Set aside. Melt the butter in a skillet. Add apples and cranberries. Stir and cook until the apples soften. Add the shrub and stir to coat and glaze the fruit. Stir until the sauce thickens a bit. Spoon into bowls; sprinkle with gingersnap crumbs and top with a dollop of the Mascarpone (or ice cream or whipped cream). Serve warm. (Serves 4)
*Ginger Shrub Syrup blends well when using pears for this recipe. Cranberry and Raspberry Shrubs also work well.
Bourbon Spiced Apple Cocktail & Mocktail
The sweet taste of apples paired with bourbon tastes like fall in a glass! Replace the bourbon with ginger beer for an equally tasty mocktail.
Ingredients
- 1 1/2 oz. bourbon
- 1 oz. Spiced Apple Shrub
- 1 oz. apple cider
- sparkling water
- ice
- apple slices for garnish
Instructions
In a lowball glass, add the bourbon, apple shrub, and cider. Fill with ice, top with sparkling water, and stir. Garnish with apple slices.
Hot Spiced Apple Rum Toddy
Bursting with the flavors of fall, this will become your new favorite drink for warming up by the fireside.
Ingredients
- 1 oz. Spiced Apple Shrub
- 1 1/2 oz. Dark Rum
- 6 oz. hot water
- ½ tsp. honey
- a squeeze of orange
- a dash of orange bitters (optional)
- To garnish: Use a slice of apple, orange and/or cinnamon stick
Instructions
In a heatproof glass or mug, measure Spiced Apple Shrub, dark rum and honey. Add hot water and stir. Add a squeeze of orange and orange bitters (if using) and stir. Garnish and serve.
