Inspiration
Eighteenth-century tavern kitchens were busy places as tavern keepers were expected to provide patrons with a choice of meat, fish, fruits, and vegetables in season as well as a choice of beverages. In 1766, Josiah Chowning advertised his tavern's opening in the Virginia Gazette by promising that "all who please to favor me with their custom may depend on the best entertainment for themselves, servants and horses, and good pasturage."
