Inspiration
Shrubs were made in the 18th century from fresh fruit and sugar, left to ferment into vinegar. After fermentation, more sugar was added to the mixture, providing a tart, sweet, and refreshing syrup that could be enjoyed in cocktails, desserts, and sauces.

Caribbean Pineapple Spritz
Our fruit-forward pineapple shrub pairs perfectly with coconut sparkling water to create this refreshing summer cocktail.
Ingredients:

​½ C. Tait Farm Pineapple Shrub
- ½ C. white rum*
- 1 can coconut seltzer
- 1 C. diced pineapple pieces
- Crushed ice
- Cocktail umbrellas (optional)
Instructions:
- Put pineapple pieces in a cocktail shaker, along with the pineapple shrub. Muddle until pineapple has broken down into a mush (shortcut: use canned crushed pineapple). Add rum and shake.
- Strain into two glasses. Top with crushed ice and coconut flavored seltzer.
- Serve with pineapple wedge garnish and if desired, a cocktail umbrella.
- *Omit rum for a refreshing mocktail
